Beet roots help lower blood pressure, protects heart and bones. Great recipes can be made from beetroot like juices, salads, soups, cakes etc.
Zucchini belongs to the gourd family and is cylindrical in shape. This summer squash vegetable is rich in Vitamin A, prevents heart attack and cancer, lowers blood pressure and cholesterol. It deters the development of asthma, osteoarthritis and rheumatoid arthritis.
The recipe given below can be eaten as a healthy snack / breakfast. Vegetables and egg are used as a filling and wrapped in a soft Indian flat bread / chapati.
INGREDIENTS
Chapati 2 no
Zucchini cut in round shape 1
Beet root grated 1/2
Lemon juice 1 tbsp
Onion julienne 1 no.
Egg omelette 2 no.
Cheddar and mozzarella cheese 2-3 tbsp as required
Olive oil 1 tbsp
METHOD
In a bowl add grated beetroot, diced zucchini, diced onion, lemon juice and salt. Mix it well and keep it aside.
Take a golf size dough of chapati,with a rolling pin add some flour to your work surface and make a disk of 7-8 inches.
Heat a nonstick tawa and put this chapati disk on the hot tawa on medium flame for 2 minutes then flip it. After two minutes put it on the naked fire and when it puffs up take it out of the fire. Repeat the same for other chapati too.
Take the same non stick tawa/pan grease some oil. Lay one chapati on low fire keep an omelette on top of the chapathi grate 1-2 tbsp of cheese all over it
When the cheese melts, on one side of the chapati add half of the grated vegetables and fold it. After folding it flip the chapati and cook for a minute on low fire. Repeat the same for the other chapati too.
Cut in half and serve hot.
