In India one of the most common vegetable cultivated widely is cucumber. It has lot of health benefits. Cucumber helps to counter inflammation in the joints, cucumber juice is good for treating ulcers, regulates blood pressure and dissolves kidney stones. It is the right vegetable to beat the summer.
This recipe is very easy to make. This soup can be taken as hot or cold.
INGREDIENTS
Cucumber 1 no.
Garlic minced 3-4 cloves
Celery stalk diced finely 1 tbsp
Onion finely diced 1/2 medium
Butter/ olive oil 1 tsp
Cheese single 1 no.
Milk 1 and 1/2 tea cup
Pepper freshly powdered 1 tsp
Salt to taste
METHOD
Take a frying pan add 1 tsp oil /butter saute garlic, onion and celery for a minute or two. Let it cool. Peel the skin, of the cucumber deseed and cut it in small pieces .Blend everything. Keep it aside.
Heat milk when it comes to boil add the cheese. When the cheese dissolves add the ground paste . Simmer and cook for a minute. Season with salt and pepper. Turn off the heat.
Serve hot with bread.
