Chicken is a source of lean, low fat protein and is full of vitamins and minerals. The protein in chicken leads to muscle growth and development. Chicken has phosphorus along with calcium which are good for bones. It increases immunity, heart healthy and good for growing children.
Cutlet refers to cooked meat in Indian cuisine. The cooked meat is cooked with onions ,garlic paste, potatoes, coriander leaves and spices. Then it is dipped in egg whites and rolled in bread crumbs And deep fried in oil. Cutlets can be frozen and used when needed.
INGREDIENTS
- Chicken breast 1
- Turmeric 1/4 tsp
- Salt to taste
- Oil 2 tbsp
- Wheat Bread loaf 3
- Onion chopped 1
- Chilli powder 1/2. – 1 tsp or
- Finely chopped green chillies
- Egg 1
- Coriander leaves chopped 3 tbsp
FOR BLENDING
- Cumin seeds 1/4 tsp
- Fennel seeds 1/4 tsp
- Coriander powder 1/4 tsp
- Carom seeds 1/4 tsp
- Garlic 3-4
- Ginger 1″
METHOD
Clean the chicken, cut into small pieces add turmeric powder, salt and 1/4 tsp paste of garlic. Marinate for 3-4 hrs.
Cook chicken and shred it and keep it aside. Boil and mash a Potato. Keep it aside.
In a mortar and pestle make a fine paste of cumin seeds, fennel seeds, carom seeds, coriander powder, ginger and garlic. Keep it ground masala aside.
Blend the wheat loaves in a blender. Spread 3/4 of the bread crumbs in a plate. The rest 1/4 bread crumbs keep it separately.
Break an egg and keep in a bowl separately.

In a kadai/frying pan heat a tsp of oil. Add finely chopped onion and saute till translucent. Add the ground masala and saute for a minute or two on low heat. Add green chillies or chilli powder. Add mashed potato, shredded chicken and 1/4 bread crumbs. Mix it well, check for salt. Add coriander leaves , mix well and turn off the heat. Let it cool down.
Make lemon size balls of the above mixture. Dip each ball in egg and roll in bread crumbs and flatten it. Repeat the same procedure with the rest.
If you are in a hurry, keep the flattened patties in freezer for half an hour in an air tight container and fry them or when ever you need them u can take out and fry them. Take a non stick flattened frying pan , grease it with 1 or two tsp oil. Cook the patties either in batches or together and cook both sides till golden brown in colour.
Serve hot with spicy coriander chutney/ Tomato sauce.
