Spinach is a leafy, dark green vegetable and an excellent source of vitamin C, K and folic acid. It is also good source of manganese, iron, Vitamin B2, B1 ,B6 and E.
This is a very simple,tasty and healthy soup.
INGREDIENTS
Baby spinach leaves 8-10
Garlic (Indian) 10 cloves
Onion medium 1/2
Egg white 1
Carrot grated 1 tbsp
Cabbage finely shredded 1/2 tea cup
Salt to taste
Olive oil 2 tsp
Pepper powdered 2 tsp
Chicken broth/vegetable stock/Water 5 tea cups
METHOD
Separate the egg white from yolk and keep aside.
Take a deep frying pan heat 1 tsp olive oil add finely chopped onion and chopped garlic and saute for a minute. Blend it and keep it aside.
Take the same frying pan add 1 tsp olive oil saute the carrot and spinach for half a minute. Add water and bring to boil.
Add the egg white slowly and keep on stirring. Add salt and pepper. Turn off the heat. Add the shredded cabbage.
Serve hot.
