Growing up in Bhilai almost most of the houses used to have huge jamun trees. We too had a huge tree and the branches of the trees rested on the terrace. We siblings used to climb over the terrace and spend our time resting and eating the berries from the trees. Those berries were so sweet and juicy.
When i got some jamuns recently and these too tasted delicious just like the ones I used to eat, it reminded me of all those good carefree days. After eating most of them I thought of making some new recipe with these delicious fruits.
This recipe is very easy and paired with coconut it was a match made in heaven.
Health benefits of jamun are they improve haemoglobin levels, loaded with Vitamin C and iron. It treats diabetics, strengthens gum and teeth, improves health of skin and eyes. Boosts heart health and prevents infection.
SERVES : 2 – 3 PERSONS
INGREDIENTS
- Jamun juice 1 /2 cup
- Sugar as per taste
- Agaragar 1 /2 + 1/2 tsp
- Coconut milk 1 /2 cup
- Sugar as per taste
- Vanilla essence one drop
- Chopped pistas and cashews 2 tbsp
METHOD
Wash nicely almost 25 to 30 jamuns and remove and discard the seeds. Put jamuns in a blender and puree it, strain and collect the juice. For this recipe we need 1/2 cup jamun juice. Keep it aside.
If you have ready made coconut milk then you can use half a cup for this recipe. But if you dont have you can make fresh from grated coconut. Add almost two cups of grated fresh coconut in a blender, dont add water. Blend to a fine paste. Strain or put in a muslin cloth and squeeze the milk out.
Heat 1/2 cup coconut milk with 1/2 tsp agaragar.
On low heat go on stirring till it comes to a boil, add sugar and a drop of vanilla essence, mix well. Turn off heat.
Before it cools down add it into four shot glasses. Add only half of the glass. Keep it to set in a refrigerator. It will take 5 to ten minutes to set.
Now add half cup jamun juice and 1/2 tsp agaragar on low heat bring to a boil.
Add sugar to taste, mix well. Turn off heat. Let it cool down slightly add on top of the set coconut. Refrigerate and let it set.
Serve it chilled with chopped nuts.
