I love litchi and love to eat litchi icecream. When I bought some litchi thought of preparing kulfi ( indian dessert). This recipe is easy to prepare and it tastes so delicious with fresh fruit.

Health benefits of litchi/Lychee are it contains Vitamin C , Vitamin B complex and phytonutrients flavonoids. It provides manganese, magnesium, iron , copper and folate. It’s good for kidney and heart and a nutrient which helps in production of blood.

Should not be consumed in excess especially children on an empty stomach and dehydration due to excess heat as it contains MCPG, which will lead to vomiting and other health problems.

INGREDIENTS

  • Milk 1 litre
  • Milk powder 4 tbsp
  • Milkmaid 3 to 4 tbsp
  • Cardamom powder 1 tsp
  • Lychee 8 + 2

METHOD

Reduce no fat one litre milk to 1 /3 rd.( if milk fat content is more reduce to 1/2). Add 4 tbsp milk powder and 3 tbsp milkmaid (The sweetness is according to your taste so increase or decrease accordingly ). Cook till it boils and turn off heat.

Add cardamom powder. Let it cool down

Peel and deseed 8 lychee.

Blend the flesh of litchi to a fine puree.

Add the lychee puree into the reduced milk, after milk cools down. You can blend everything to get a smooth texture.

Add it to molds ( any mold of your choice, even can use steel glasses), chop and add the reserved lychee into molds.

Chill in freezer for 10 to 12  hours or till it sets.

Enjoy your kulfi during hot afternoons or evenings during summertime.
