Mint is an aromatic herb and is used all over the world. Mint has lot of health benefits. It is good for skin and is used as a breath freshener. This herb is used to cure stomach ache, chest pains and common cold.

The recipe given below is very easy to prepare. It is healthy, delicious and can be prepared with cooked rice or left over rice. Mint rice can be prepared for tiffin box.

INGREDIENTS

Mint leaves 1 cup
Coriander leaves 1 cup
Garlic 2/3 cloves
Green chilly 2 no.s
Coconut grated 1 tbsp
Cooked rice 2 cups
Lemon juice 1 tbsp
Salt to taste
Roasted cumin powder 1 tsp
Olive oil/refined oil/butter 2 tsp

METHOD

Blend mint leaves, coriander leaves, lemon juice, green chilly,garlic, coconut in a blender into a smooth paste . Keep it aside.

Heat oil in a kadai / pan add the paste and on low flame saute it for a minute. Add the cooked rice ands roasted cumin powder and mix it well. Add salt according to taste.Turn off the fire.

Serve hot with raita or papads.

Note : Any rice can be used .Here I am using ponni boiled rice.
