- Orange juice 1/2 cup
- Zest of orange 1
- Corn starch 1 tbsp

METHOD
Take an orange and grate the outer part and keep the zest aside. Cut and squeeze the juice. ( If you get half cup it’s enough for the sauce or u will need another orange).
In a bowl marinate egg, pepper, chicken boneless, salt for 3-4 hrs, for best results marinate overnight.
In a big bowl add maida and corn starch and mix well.
Heat oil in a non stick frying pan with edges for shallow frying. Add the chicken pieces one by one into the cornstarch- maida/ refined flour, coat the chicken pieces in the flour and shallow fry both sides till slightly golden in colour.
I shallow fried the chicken pieces in two batches(the first lot was done, very less oil was left after frying, so wiped the pan, added oil again and shallow fried the next batch). After frying keep the chicken pieces in a kitchen towel to remove excess oil. Keep it aside.
Add 1/2 cup water in a bowl, add corn starch, soya sauce, tomato sauce , orange zest, orange juice and honey. Mix well and keep it aside.
Wipe or clean the same frying pan. Heat a tbsp oil, add finely chopped ginger, garlic and saute for two minutes on medium heat. Add the capsicum sauté for another two minutes. Add chilli flakes , saute for a second. On low heat add the corn starch in which all sauces and honey were mixed into the pan. Stir it till it thickens. Check for salt.
Add the shallow fried chicken into it and mix well on low heat. Garnish with spring onions and serve it hot as starter.
