Prepared this beautiful panacotta from garden flowers. Tried preparing for the first time with this lovely looking flowers (blue pea vine /Clitoria ternatea). I was blown away with the beautiful colour.

For this recipe have used agar agar. Agar agar is a natural vegetable gelatin, it’s made from plant source not animal. It is loaded with fiber, there is no carbs, fat , calories or sugar. It acts as a laxative. It absorbs bile and thus dissolves more cholesterol.


  • Flower (blue pea vine /Clitoria ternatea) 5-6
  • Agar agar 4 -5ml
  • Milk 1 tea cup
  • Sugar 2 tbsp
  • Ginger 1-2 inch
  • Cardamom 2


This lovely looking flowers (blue pea vine /Clitoria ternatea).

In a cup of warm water add the flowers. Cover and keep for some time or till the flower completely releases the colour and turns the water into a nice blue colour. Strain and keep the water aside. This can be done previous day of preparing the panacotta too.

I have taken shot glasses 5-6 glasses to make this panacotta. This shot glasses have kept on to muffin tray in a slanting position.

In a bowl take agar agar ,rinse once with water and soak it in half cup water for ten minutes.

Heat it and dissolve it till no strand is visible. Keep it aside.

Heat a cup of milk add sugar according to your taste. I have added a tbsp of sugar.

Add the agar agar and again bring to a boil turn off the heat. Let it slightly cool down, before it sets. Pour into the glass and keep in a slanting position and refrigerate to set.

Once it sets in an hour or so, start preparing the next step.

Make a paste of ginger and powdered cardamom. Keep it aside.

Rinse once again agar agar. Soak for ten minutes.

Heat agar agar in half cup of water, stir till it dissolves completely. Keep it aside.

Add sugar in the blue colour water. Mix it well.

Heat the blue colour water add agar agar and bring to a boil. Turn off heat.

Add the ginger paste and cardamom powder. Mix it well.

Strain it.

Let it slightly cool, it should not set.

Take out the glasses from the fridge, the milk would have set. Slowly pour the blue syrup over it. Keep it again in the refrigerator.

After it sets you can garnish with chopped pistachios and serve chilled.
