This egg biryani is one of the delicious and flavorful biryani. Traditionally biryani is made on dum but this is an easy to prepare one pot biryani. This delicious biryani is cooked in fragrant basmati rice with aromatic spices, herbs and boiled eggs. The biryani rice also should be of good quality.

Eggs have lot of nutritional benefits and are super health foods. They are consumed all over the world and is a rich source of protein. Eggs can be prepared in many ways, they are poached, fried, scrambled or boiledThe whites are rich sources of selenium, Vitamin D, B6, B 12 , B2 and minerals such as zinc, iron and copper.

INGREDIENTS

  • Boiled eggs 2
  • Tomatoes medium 2
  • Onion 1
  • Garlic cloves 5-6
  • Cinnamon 1″
  • Cloves 2
  • Cardamom 2
  • Coriander powder 1 tsp
  • Chilli powder 1 tsp
  • Pepper corns 1 tsp
  • Turmeric powder 1/4 tsp
  • Mint leaves finely chopped 1/2 cup
  • Basmati rice 1 cup
  • Ghee 1 tbsp
  • Coconut oil/refined oil 1 tbsp
  • Salt to taste

METHOD

In a kadai heat coconut oil, add roughly chopped onions, cinnamon , cloves, pepper corns, cardamom and saute till onion becomes slightly golden. Add coriander powder and saute for a minute on low heat or till raw smell disappears. Add chopped tomatoes, garlic paste , chilli powder and saute till it becomes mushy. Turn off heat.

Let it cool down. Blend to a nice smooth paste.

In the same kadai add ghee, slit slightly the eggs and add it whole , add turmeric powder and the ground masala paste and saute on low heat for 2 to 3 minutes. Add the basmati rice and incorporate everything nicely.

Add salt and chopped mint leaves and mix well.

Add two cup water and pressure cook for 3 to 4 whistles.

Serve this one pot delicious egg biryani with raita.
