Idiyappam is a traditional breakfast dish of Kerala. It is also a traditional dish of Tamil nadu, Andhra pradesh, Karnataka and Sri lanka.

Main ingredient is rice flour which is made into a dough using boiling water and pressed into a noodle form and steamed. This is served with variety of side dishes like chicken stew, cauliflower kurma, coconut milk, vegetable stew, chicken curry, egg curry etc.

INGREDIENTS

  • Rice flour 1 cup
  • Water 1 and half cup
  • coconut grated 1 /4 cup
  • Salt 1/2 tsp
  • Oil 1 tbsp + 1 tbsp
  • Banana leaf 1

METHOD

Rice flour was prepared at home by my mom. Wash and soak rice for 3 hours, dry under sun for 2 to 3 days and powder in machine to a very fine powder.

Above pics is the idiyappam stand. There are four plates.

I have cut disc shaped banana leaf and kept it slightly on low flame. Then I kept it in four plates of idiyappam maker. Either grease idiyappam plates or place a banana leaf in the plates.

In a deep vessel heat 1 and 1/2 cup water, add salt and oil. Once small bubbles come turn off heat and add the rice flour into the water. Gather it quickly and form a dough.

Take the dough out transfer on to a plate, knead with hands but be careful the dough will be hot. Knead for two minutes like a poori dough and cover it. The dough should not stick to your fingers.

For making idiyappam we need a idiyappam maker or nazhi. Grease the idiyappam mold.

Divide and add an orange size dough into the idiyappam maker and press it into a idiyappam plate in concentric circles. Make sure it is not thick or it won’t cook properly.

Sprinkle 2 tbsp coconut on top. Repeat the process.

The dough given will fit in four plates of idiyappam maker.

In a pressure cooker or steamer add water and let it come to a boil. Keep the idiyappam into the pressure cooker or steamer and steam for 5 to 6 minutes.

Once it cools down take out with the banana leaf and demold the idiyappam into a service dish.

Serve hot with any potato curry/ stew / korma or any nonveg curry.

NOTE : Rice flour is homemade and I have given the measurements for water. Water measurements for Store bought rice flour might differ.
