Banganapalli mangoes are cultivated in Andhra Pradesh. It is 20 cm in length, oval shape with yellow flesh and thin smooth yellow skin. It’s very sweet and lacks fibre. This mangoes are so good to prepare desserts.

Mangoes are low in calories, high in nutrients particularly Vitamin C. Its high in immunity, improves digestion, supports heart health, boosts immunity and improves eye, hair and skin health.

I have prepared this dessert from mangoes and tapioca Pearls. Banganapalli mangoes are from tirupati , these are homegrown mangoes. They are very sweet and fleshy, very ideal to prepare this pudding.

SERVES: 2 – 3 PERSON

INGREDIENTS

  • Banganapalli mango 1
  • Milk 1 and 1/2 cup
  • Milkmaid to taste
  • Cardamom powder 1 tsp
  • Tapioca Pearls / Sabudana  1/4 cup
  • Chopped nuts 2 tbsp

METHOD

Wash the tapioca Pearls and soak for 4 hours in water.

Peel mango, discard the skin and seed. Chop the flesh and blend the flesh to a fine paste.


Drain the water from the tapioca Pearl’s.

Heat 1 and half cup milk, add tapioca Pearls, 1 cup water and cook till tapioca Pearls becomes transparent.

Add milkmaid as per taste , mix well and turn off heat. Let it cool down completely.


Add the mango puree , cardamom powder and mix.

Keep it in refrigerator. Pour it in glasses and serve chilled topped with nuts.
