Onion tomato coconut chutney is a side dish for South Indian breakfast like Indian pancake/ dosa/idli/uttapam. It is spicy, tangy and tastes delicious. Green chilies, onions, tomatoes , coconut and curry leaves are sauteed in oil and blended into a smooth paste in a blender.
INGREDIENTS
Onion medium. 1
Shallots. 4-5
Tomato. 1
Dry red chilies 2-3 according to taste
Coconut 3/4 tea cup
Curry leaves 3 tbsp
Refined oil/coconut oil 2 tbsp.
Salt to taste
METHOD
Heat oil in a thick bottomed kadhai/skillet and on medium heat add first dry red chillies, then chopped onions, shallots and curry leaves. Fry for 2-3 minutes add the tomatoes and saute till tomatoes become soft. Add the coconut and saute for 2-3 minutes. Turn off the heat
Let it cool down. Blend in a blender into a smooth paste. Take it out in a bowl. Add little ghee/ coconut oil on top.
Serve with idli/dosa/uttapam.
