Sweet diamond cuts is a very popular kerala snack prepared in every household and a popular bakery item too. It’s a very addictive, tasty snack , can be prepared very easily and very easy to prepare.
When we were kids my mom used to prepare this snack in large quantities and we siblings used to gather around helping her. We used to cut out the shapes and separate it in plates so that it was easier for my mom to fry in batches. Usually in bakery sugar is coated but mom used to prepare the coating with jaggery which is much healthier option than sugar. She used to prepare in huge quantities and store in big containers.
It’s been a while I have prepared this snack and when we siblings meet we always talk about this very addictive sweet dish. As i love sweets decided to prepare this dish. I prepared a small batch which will serve for 2 to 3 person.
SERVES 2 -3 PERSON
INGREDIENTS
FOR THE DOUGH
- Wheat / Maida flour
- Salt 1/2 tsp
- Oil 3 tbsp
- Water as required
FOR JAGGERY SYRUP
- Jaggery 1 /4 cup
- Water 3 -4 tbsp
OTHER INGREDIENTS
- Oil for deep frying
METHOD
In a large bowl add wheat flour, oil, salt and mix nicely.
Mix little by little water and gather into a stiff dough. Add a tbsp of oil and keep aside. Cover and Rest it for 15 minutes.
Divide the dough in two parts, knead it and roll into balls. Dust some flour on working board and roll each ball out, the disc should not very thin, roll out little thick.
Cut it in diamond shape and separate it and keep it on to a plate.
Heat oil in a deep frying pan. On medium heat add the cut pieces and fry both sides till golden brown. Keep on a kitchen towel to drain excess oil.
In a deep frying pan add the jaggery and water. Let it come to a boil, stir occasionally.
Cook on low heat till you get a 2 string consistency. Add the fried pieces and mix well. Turn off heat. Take it out on to a parchment paper.
Let it cool down, keep it in an airtight container. Enjoy this snack with evening tea.
