Aam Panna is mainly consumed in North India during summer, it is a refreshing drink. Due to excessive sweating it not only quenches thirst but prevents the excessive loss of sodium chloride and iron. Raw Mango is a good source of vitamin C, B1 and B2. It is considered to treat gastrointestinal disorders.
In this recipe I have not used sugar but added jaggery. Adding sugar gives a light green colour where as adding jaggery gives a brown colour to the drink. Jaggery is a healthier option than sugar. The spices gives a unique flavour to the drink. Consuming cold with ice cubes in summer is really refreshing.
INGREDIENTS
- Raw Mango large 2
- Jaggery grated 1/2-3/4 cup
- Roasted cumin powder 1 tbsp
- Pepper powder 1 tbsp
- Asafoetida (hing) 1/4 tsp
- Rock salt/ black salt according to taste
METHOD
In a vessel boil little water, just enough to dissolve the grated jaggery. Strain and keep it aside. Let it cool down.
Wash and boil mangoes in a pressure cooker with little water. Let them cool.
Peel, mash, remove the seed and strain the pulp with the water. Add cumin powder, crushed peppercorns, black salt, asafeotida and Jaggery syrup. Mix well.
Divide the mixture in four – five tall glasses, fill it up with chilled water and ice cubes. Stir well and serve.
Note: 1) you can increase or decrease Jaggery syrup, crushed pepper corns , black salt according to your taste.
2) you can bend the mango pulp in a blender to get a smooth paste.
