Spinach basically is known as Palak in Hindi, they are dark leafy greens.Spinach provides proteins, minerals,irons and vitamins and is good for skin and hair. Cottage cheese is referred as Paneer in Hindi.
Palak paneer is a north Indian dish and is one of the Popular dishes in Northern India, soft paneer is cooked in spinach gravy. I have tried out lot of ways to make Palak paneer but this recipe given below has come out well. My Dad loves to eat Palak Paneer and it is one of his favorite dish.
INGREDIENTS
Palak(spinach) 1 bunch
Paneer (indian cottage cheese) 200 gm
Onion diced finely 1 medium
Tomato finely diced 1 medium
Garlic 8 cloves finely minced
Cumin 1 tsp
Green chilies 2
Lemon juice 2 tsp
Asafoetida 1/2 tsp
Bay leaf 2
Turmeric 1/4 tsp
Garam masala 1tsp
Cream 1 tbsp
Ghee/unsalted butter/oil 1 tbsp
METHOD
Spinach puree
Spinach has to be rinsed thoroughly three times .Remove the stems and blanch it for 2 to 3 minutes and put immediately in ice cold water. This helps to retain the green colour of spinach.
Cool it and then grind spinach (drain the water completely) with chilies and lemon juice into a smooth paste. Keep it aside.
Spinach gravy
Take a Kadai/pan and heat ghee/oil/butter, add the cumin seeds when they change colour add the finely chopped onions, bay leaves and garlic and saute them till they turn slightly brown. Add turmeric, asafoetida and stir for few seconds. Add the finely chopped tomatoes and saute till the tomatoes becomes very soft.
Add the spinach puree and stir, add the garam masala and when the gravy starts to boil add the paneer cut in cubes and fresh cream. Add the salt . Simmer for a few seconds.
Serve it hot with roti.
Note : If fresh cream is not available just boil some milk and add the cream on top with little milk ( 1 tbsp)
If gravy is too thick add some water or milk to it.
