In kerala these rose cookies are called as achappam and in Tamil nadu its known as achumurukku. This snack is very famous in kerala, south of india.

Achappam or Achu murukku is mildly sweet and is very famous among Indian Christians and a must for Christmas. It is shaped like rose and is prepared from coconut milk, sugar, riceflour, eggs. To prepare this is very tricky and with experience it improves. These are deep fried and can be stored in airtight containers for later use.

INGREDIENTS

  • Rice powder not roasted 3/4 cup
  • Sugar 3 tbsp
  • Salt 1/2 tsp
  • Black sesame seeds 1 tsp
  • Egg 1
  • Coconut milk 3/4 cup
  • Coconut / refined oil for deep frying

METHOD

This is the achapam mold, usually it comes in iron. I am using a nonstick one.

In a bowl sieve and add rice flour.

Beat the egg till fluffy.

Powder the sugar.

In a large bowl add with rice flour. Add salt and gradually add coconut milk, see to it no lumps are formed. Beat the eggs till fluffy and add into the batter.

There should not be any lumps, nicely beat it with a whisker. Batter should not be too thick or thin consistency.

Add salt, sesame seeds and mix the batter.

In a deep frying pan heat oil. Keep the achappam/achu murukku mold in the hot oil for a minute. Mine is nonstick mold so I did it in oil only for 10 seconds.

Bring the heat to low to medium heat, Dip the mold in batter and make sure to dip only 3/4 th and immediately transfer to the oil.

Shake gently the mold and the achapam will leave the mold.

Take it out with a slotted spoon.

Fry both sides golden brown. Keep it in a kitchen towel to drain excess oil. Repeat the process with the rest of the batter.

Once it cools down transfer to airtight containers.

Enjoy as an evening snack with a cup of tea.
