Potatoes are very healthy, inexpensive and popular root vegetable. Boiled potatoes are rich in vitamins, phosphorus, minerals, and low in calories.
The main ingredients in this recipe given below has boiled baby potatoes, garlic,coriander, celery and Indian spices. Boiled potatoes are stir fried in ground paste.
INGREDIENTS
Baby potatoes 15
Turmeric 1/2 tsp
Coriander powder 2 tsp
Jeera/cumin 1 tsp
Fennel/saunf 1 tsp
Carom seeds /ajwain 1 tsp
Garlic cloves (Indian) 6-7
Ginger 1 inch piece
Coriander leaves 1/2 cup
Celery 1 tbsp
Green chillies 2-3
Refined oil/olive oil 2- 3 tsp
Salt to taste
METHOD
In a pressure cooker add water to the base then in a deep bottomed vessel keep baby potatoes, do not add water to the potatoes and cook until 4 whistles. Prick the potatoes with fork.
In a blender blend jeera, fennel, carom seeds, garlic , ginger, coriander leaves, green chillies and celery( you can use mortar and pestle). Make a coarse paste and keep it aside.
Take a non stick frying pan heat oil and on low heat add the ground paste and saute till the raw smell of garlic disappears. Add turmeric and coriander powder and saute for a minute. Add baby potatoes and season with salt. Add 2 tbsp water and on low heat cover and cook the potatoes for 5-8 minutes stirring occasionally.
Serve hot with rice or as a snack/appetiser.
