Baingan/aubergine/eggplant/brinjal are good for heart, controls diabetes, helps in weight loss, prevents cancer, lowers cholesterol and good for skin.
Baingan bharta is a vegetarian dish prepared by grilling egg plant over direct fire or on charcoal to get a smoky flavour. Then it is mashed and cooked with onions and tomatoes. This dish is eaten with Indian flat bread or rice.
INGREDIENTS
- Baingan(egg plant) 1
- Onion medium 1
- Tomato big 2
- Turmeric powder 1/4 tsp
- Green chillies. 1
- Garlic cloves 5-6
- Coriander leaves 1 tbsp
- Salt to taste
- Oil 1 tbsp
METHOD
Wash the baingan/aubergine in water, pat dry with a kitchen towel. Apply oil all over the baingan.
Keep it over an open flame and roast on low heat. Turn it every 2 minutes on the flame so that it cooks evenly.
Roast till it is tender.Check it with a knife ,if it goes easily it is cooked. Let it cool down. Peel the skin of the cooked eggplant and mash it . Keep it aside.
In a deep pan/kadai heat oil. Add finely chopped onions, green chillies and garlic. Sauté till it becomes translucent. Add turmeric powder.
Add the finely chopped tomatoes and sauté till it becomes soft.
Add mashed egg plant or baingan and incorporate well in this onion tomato mixture. Cook on low heat for 3-4 minutes.
Season with salt and stir it well, cook for two three minutes and turn off the heat.
Garnish with coriander leaves and serve hot with rotis/ phulkas/rice.
Note: buy lighter baingan/ egg plant because heavier ones will have ripe seeds and ruin the taste of the dish.
