Raw bananas are vegetables which are consumed only after they are cooked. They are starchier and less sweet and are served boiled, steamed or fried. They have lot of health benefits.
The recipe given below is simple to make. Raw banana is half cooked, skin is removed and grated. It is stir fried with Indian spices and grated coconut is added.
INGREDIENTS
Raw Banana 1 no.
Shallots diced finely 4-5
Mustard 1/2 tsp
Yellow dal 1/2 tsp
Currry leaf 1 sprig
Asafoetida 1/2 tsp
Whole dry red chilli broken 2 no.
Coconut grated 1/2 tea cup
Coconut oil / any oil 2 tsp
Salt to taste
METHOD
In a deep bottomed pan boil the whole banana for 10 minutes in medium flame. Turn it off and let it cool down.
Once it cools down slit the skin with a knife then peel off the skin and grate the banana. Keep it aside. Do not over cook the banana. It should be cooked soft but firm enough to grate.
Take a wok /frying pan heat oil. Add mustard seeds, dal and let mustard seeds splutter. Add curry leaf, broken dry red chilli and shallots and fry till shallots are slightly golden in colour.
Add the grated banana, salt and asafoetida and on low flame cover and cook for 3- 4 minutes stirring in between. Add the coconut and mix it well and saute for a minute. Turn off the heat.
Serve as a side dish with rice.
