Raw bananas are vegetables which are consumed only after they are cooked. They are starchier and less sweet and are served boiled, steamed or fried. They have lot of health benefits. They are rich in Vitamin C and B6. They help in preventing heart problems, controls diabetes, good for heart and rich in fibre. People with weak digestive system should refrain from eating raw bananas.
The recipe given below is simple to make. Raw banana is half cooked, skin is removed , discarded and inside part is grated. It is stir fried with Indian spices and garnished with grated fresh coconut.
SERVES : 2-3 PERSONS
INGREDIENTS
- Raw banana big 2
- coconut grated 2-3 tbsp
- Mustard seeds 1 tsp
- Split head or moong dal 2 tbsp
- curryleaves a handful
- salt to taste
- asafoetida 1 tsp
- cumin seeds 1 tsp
- lemon juice 1 tbsp
- Green chillies 2-3
- Refined or coconut oil 2tbsp
METHOD

Wash and clean 2 big bananas. In a big deep vessel bring waters to boil and immerse the bananas and cook for 10 to 12 minutes on medium heat. Do not over cook the banana. It should be cooked soft but firm enough to grate.
Take it out , slit with a knife.
Take out the white part.
Discard the skin.
Grate the bananas in a grater. Do not over cook the banana.
keep it aside.
For the seasoning.
Heat two tbsp coconut oil add asafoetida.
Add urad or moong dal, cumin seeds, mustard seeds, let it splutter.
Add the curry leaves and green chillies.
Add the grated banana. Season with salt and Mix everything.
Once it is cooked add coconut and incorporate well.
Turn off heat, add lemon juice, mix well.
Serve as an accompaniment with rice.
