Batata vada or Potato fritters is a popular vegetarian indian street food which originated in Maharashtra. Mashed potatoes are coated in thich chick pea flour and deep fried in oil. It is served with green chillies and different varieties of chutneys.
Health benefits of chick pea flour is it helps in regulating blood sugar. Due to high fiber content helps in digestion. It is packed with protein, vitamin and minerals. Chickpea is widely grown and eaten been in the world.
INGREDIENTS
- Onion finely chopped 1
- Potato medium 3
- Lemon juice 2 tsp
- Ginger 1″
- Garlic 4-5
- Green chillies 2-3
- Gram flour/ besan 1 cup
- Chilli powder 1/2 tsp
- Soda bicarbonate 1 pinch
- Turmeric powder 1 tsp
- Mustard seeds 1/2 tsp
- Asafoetida tsp
- Coriander leaves chopped 2 tbsp
- Curry leaves 1 spring
- Sunflower refined oil
- Salt to taste
METHOD
FOR THE BATTER
In a large bowl add gram flour, chilli powder, 1/2 tsp turmeric powder, a pinch of baking soda and salt. Mix it well. Add water slowly at a time. Whisk it to make a batter of coating consistency. Rest for 15 minutes.
Blend in a blender and make a paste of garlic, ginger and green chillies. Boil, cool and peel the potatoes. Mash it nicely.
Heat a deep frying pan add 1 tbsp oil , add the mustard seeds till it crackles. Add finely chopped onions, curry leaves and saute for two minutes or till onions become translucent.
Add 1/2 tsp turmeric powder, asafoetida mashed potatoes, 2 tbsp chopped Coriander leaves and salt. Mix it well and turn off the heat. Add lemon juice and mix well.
Make equal balls of the above mixture.
Heat a deep frying pan and add oil. Dip potato mixture balls in besan mixture and deep fry in oil till it turns golden. Drain and keep in a kitchen towel or absorbent paper.
Serve hot with coconut chutney or sauce.
