Beet roots are dark coloured vegetable with lot of health benefits. They are tender and sweet and can be eaten raw, boiled, roasted or grilled. Beet roots prevents cancer, reduces anemia, improves digestion and prevents constipation. Slows progression of dementia, lowers blood pressure and is good for skin and hair.
This recipe is very simple and delicious. Beetroot is cooked and garnished with grated coconut. Flavour of curry leaves, onions and coconut brings unique taste to the entire dish.
INGREDIENTS
Beetroot medium, finely chopped 2
Onion medium, finely chopped 1
Coconut grated 1/4 tea cup
Mustard 1 tsp
Turmeric 1/4 tsp
Curry leaves 1 sprig
Green chillies split 2-3
Yellow split dal 1 tsp
Oil
Salt to taste
METHOD
Take a deep frying pan, heat oil on medium heat and add mustard and dal , when it splutters add finely chopped onions, curry leaves and green chillies. Saute till onion turns into golden colour.
Add turmeric saute for half a second. Add the finely chopped beetroot mix well. Add 2 tbsp water and on low heat cover and cook till beet root is done, stirring occasionally.
When the beetroot is done add salt. Add the grated coconut mix well and switch off the heat.
Serve hot with steamed rice.
