STIR FRY BELLPEPPERS WITH MUSHROOM GRAVY

Bell peppers are available in yellow, orange, red, purple, green. They are bell shaped ,plump and are also known as capsicum, basically less pungent and sweet than other peppers. For their attractiveness and colour these vegetables are used all over the world.

They are rich in antioxidants and have anti-inflammatory properties. Green pepper is good for healthy hair and nails, it is low in fat and calories.

This recipe is about stir fried vegetables( onions, tomatoes and bell peppers) which is later mixed in a gravy with button mushrooms in mild masala.This dish goes well with roti, rice , bread.

INGREDIENTS

FOR STIR FRY

Capsicum 1 cut in squares
Tomato de seeded 1 cut in squares
Onion 1 small cut in squares
Garlic 6 -7 cloves
Olive oil 2 tsp

FOR GRINDING

Onion 1 big
Celery 1 tsp
Garlic  5 -6 cloves
Coriander powder 1 tsp

OTHER INGREDIENT

Buton mushrooms 200 grams
Pepper powder 1 tsp
Salt to taste
Olive oil 2 tsp
Turmeric 1/4 tsp
Green chilly 2 no, finely diced

METHOD

Take a nonstick tawa heat olive oil and add capsicum, onion, tomato and garlic. Stir fry till it is little charred. Keep it aside.Season with salt.

Take a kadai / frying pan heat olive oil. Add onions, garlic,celery and fry till they become slightly brown. Add  1 tsp coriander powder and fry till raw smell of coriander disappears, do not burn them. After it cools down blend it into a smooth paste in a blender.

Take a frying pan heat little oil and add the  smooth paste and fry for 2 – 3 minutes add the mushrooms and cook for 5- 8 minutes stirring continuously. Mushrooms will cook in its juices and when the gravy becomes thick add salt. Add the stir fried vegetables ,pepper and mix well. Turn off the heat.

Serve hot with roti / bread / rice.
