Chicken is low in fat and calories and is considered as a lean meat with loads of protein, minerals and vitamins. The protein in chicken leads to muscle growth and development. Chicken has phosphorus along with calcium which are good for bones. It increases immunity, heart healthy and good for growing children.  It is an excellent source for zinc, iron andVitamins B6, B12 and D.

Chicken ghee roast is a famous manglorean dish from a small town, kundapur in Mangalore. It’s fiery, red and tangy dish with lots of ghee.

INGREDIENTS

FOR MARINATION

  • Chicken 1/2 kg
  • Curd 2 tbsp
  • Turmeric powder 1/2 tsp
  • Lemon juice 1 tbsp
  • Salt to taste

FOR DRY ROAST

  • Coriander seeds 2 tbsp
  • Cinnamon 1″
  • Cloves 2
  • Fennel seeds 1 tsp
  • Pepper corns 1 tsp
  • Cumin seeds 1 tsp
  • Red dry chilles 2-4
  • Garlic.  4-5
  • Ginger 1″
  • Tamarind a small piece

OTHER INGREDIENTS

  • Onion finely chopped 1
  • Jaggery 1 tsp
  • Curry leaves 1 sprig
  • Ghee. 2 tbsp

METHOD

In a vessel add chicken, curd, turmeric powder, salt and lemon juice. Mix it well. Marinate for 3-4 hours.

Heat a frying pan dry roast coriander seeds on low heat for a minute or two , then add cumin seeds, fennel seeds, pepper corns, cloves, cinnamon, red dry chilles, garlic and ginger for another two minutes. Turn off the heat, let it cool. Add tamrind and blend in a blender adding water into a fine paste.

Heat a deep frying pan add a tbsp of ghee. Add the marinated chicken and on medium heat cover and cook for ten minutes.

Heat another frying pan add a tbsp ghee add finely chopped onions and curry leaves. Stir till it becomes golden brown in colour. Add the masala paste and go on stiring till it becomes little dry on medium heat. Add the chicken to the masala, check for salt. Add a cup of water, jaggery and on low fire cover and cook till chicken is done, stirring in between.

If u want the chicken to be dry don’t add too much water and vice versa.

Serve hot with roti/ dosa/ idiyappam/rice/bread.

Note : amount of ghee and chillies are shown less in this recipe, chillies and ghee can be added more if you like spicy food and don’t have a faint heart.

I have made it little semi gravy dish, if you want the dish to be dry ,add little water.

Don’t roast the spices on high heat, the flavour will be lost.
