This soup is very easy to make. It is tasty, delicious ,healthy and a complete meal. Chicken soup is good for the cold or on a rainy day nothing is better than a hot bowl of chicken soup.
INGREDIENTS
Chicken breast cut in cubes 100 gms
Rice Vermicelli 5o gms
Raw mango grated 1 tbsp
Carrot medium scraped( thin ribbon shape) 1
Garlic minced 4-5 cloves
worcestershire sauce 1 tsp
Spring onions finely chopped 2 tbsp
Egg white 1 no.
Water 4 tea cups
Pepper powdered 1 tsp
Salt to taste
METHOD
Soak the rice vermicelli in slightly warm water for 10- 15 minutes till they are soft but crispy. Drain the water and keep it aside.
Boil chicken cubes and garlic in 4 cups of water , when the chicken becomes tender add mango grated, carrot, spring onion bulbs finely chopped. Cook vegetables for 5 minutes.
When the vegetables are cooked add the egg white using a fork . Egg whites have to be slowly added and keep on stirring while adding them in the soup. Add worcestershire sauce and salt to taste and turn off the fire.
Take a bowl put the rice vermicelli and pour the soup over it.
Garnish with spring onions , pepper powder and serve hot.
