Carrots are excellent source of Vitamin A, rich in beta carotene a powerful antioxidant, also contains folate, manganese, phophorous, magnesium ,Vitamin E , zinc. They are sweet and crunchy and good for general health.

Carrot Halwa is one of the most popular traditional sweet dish prepared all over India. Fresh carrots, milk sugar is used to make this simple sweet dish.

INGREDIENTS

Carrot 500 grams / 4 big ones
Sugar 3/4 cup
Milk 2 cups
Cardamom  powder 1 tsp
Dried raisins 50 grams
Ghee 3 tsp

 

METHOD

Wash , clean and grate the carrots. Here I have cut the carrot in medium pieces and run in a blender.

Heat 1 tsp ghee in a pan / kadai  on low heat,  add the dried raisins and saute for two minutes . Keep it aside.

In  a deep pan/ non stick kadai add 2 cups of milk. Boil and reduce the milk to one third . Add the sugar and cook for 2 minutes.

Add the  carrots and cook in medium heat for 15 minutes or till the milk evaporates  and the carros are cooked. Add 2 tsp ghee. Stir continuously.

Lower the heat add the raisins and saute for 2 minutes . Turn off the fire. Add the cardamom powder and stir it.

Serve with ice cream.
