Palada payasam is a delicious traditional kheer or payasam of kerala which is served at the end of sadhya ( feast). This is definitely a treat and a very much loved, preferred sweet dish by malayali in kerala.

Palada payasam is prepared from flakes of cooked rice, milk and sugar. The ada or flakes of fresh rice can be prepared at home or bought in store. Ada is prepared from rice flour where a thin batter is prepared and a fine layer is spread on banana leaves, it is steamed and cut in small pieces.

INGREDIENTS

  • Ada 1 /4 cup
  • Milk 1 /4 cup + 1/2 litre
  • Sugar 1/2 cup
  • Water 1/4 cup
  • Cashews a handful
  • Cardamom powder 1 /2 tsp
  • Ghee 1 tbsp

METHOD

Wash the ada and drain the water.

Add ada into a vessel. Add sugar , 1 /4 cup water and 1/4 cup milk.

Mix it well.

Keep it in a pressure cooker for one whistle. Let it cool down.

Open the lid add 1 /2 litre milk into the ada. Cook on medium heat , once the first whistle comes, lower the heat and cook for 20 to 25 minutes.

Turn off heat, let it cool down. Once it cools down open the cooker lid, the milk would have turned pink due to caramalisation of sugar.

In a frying pan heat ghee, add cashews and saute till it turns golden in colour.

Add the cardamom powder, cashews and ghee in the palada.
