Moong dal or green gram when it is skinned and split they are called as yellow moong dal/split yellow gram. They are flat, yellow and easy to cook. Health benefits of split yellow gram are they are easy to digest, like other lentils and pulses it is also a good source of dietary fibre and protein. It is rich in calcium, potassium and low in fat.
The recipe given below is very simple and tasty. Yellow split gram is dry roasted and then cooked in onion, tomato, garlic, Indian spices and garnished with coriander leaves. Ghee/ clarified butter is added at the end to give a unique flavour and taste.
INGREDIENTS
Yellow split gram 1/2 tea cup
Onion finely diced 1/2
Tomato finely diced 1
Capsicum cut in small pieces 1/2
Baby corn 2 no.
Garlic paste 2 tsp
Coriander leaves finely cut 2 tbsp
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
Coriander powder 1 tsp
Asafoetida 1 tsp
Chilli powder 1 tsp
Turmeric powder 1/4 tsp
Oil/ Ghee 1 tbsp
Salt to taste
METHOD
Heat a frying pan and add the dal and dry roast it on low heat till the dal changes colour slightly (5-6 minutes). Wash and boil the dal.Pressure cook the dal, for 1/2 cup dal add 1 cup water for 4 whistles.
Take a wok / kadai/frying pan and add 2 tsp oil/ ghee (clarified butter). Add mustard and cumin seeds when it splutters add the onions and fry till it turns golden brown, add garlic and fry till the raw smell disappears.
Add turmeric powder, coriander powder, chilli powder and saute for 2 minutes on low flame. Add tomatoes, capsicum and baby corn and saute till tomatoes becomes soft.
Mash the dal nicely and add to the above mixture. Add a cup of water. Water has to be added according to your liking. Add asafoetida powder. Cover and cook on low heat for 5 -8 minutes. Turn off the heat.
Garnish with coriander and drizzle 1 tsp ghee and serve hot with rice.
Note. Dry roast the lentils (dal).
Add water according to your liking.
I fry the masala and add the roasted dal into it, add water and keep it in a vessel in the cooker and on top keep rice in another vessel. Saves energy and time when food is cooked in a pressure cooker.
