Eggs have lot of nutritional benefits and are super health foods. They are consumed all over the world and is a rich source of protein. Eggs can be prepared in many ways.
This recipe here is very simple and tasty. Eggs are simmered in onion and tomato sauce. Indian masala is added to give a distinct flavour. Coriander and celery have distinct flavours. Here i am adding celery in the gravy.
INGREDIENTS
Hard boiled eggs 2 no.
Onion medium diced 2
Tomato medium diced 3
Garlic cloves 4-5
Garam masala powder 1 tsp
Coriander powder 2 tsp
Green chilly 2 (as per taste)
Oil 2 tsp
Celery stalk/coriander leaves finely diced 1 tbsp
Salt to taste
METHOD
Boil two eggs and keep it aside.
Heat 1 tsp oil in a wok and saute the onions and garlic. When it becomes golden brown add coriander powder and saute a minute or two till the raw smell of the coriander disappears ( Do not burn it ). Add tomatoes, green chillies and celery stalk and saute till tomatoes become soft. Turn off the heat and keep it in a plate to cool.
When it cools down put in a blender and blend it.
Clean the wok heat 1 tsp oil and add the ground masala and saute for two minutes. Add one cup water( as required) and the boiled eggs. Add garam masala powder, salt . Cover and cook till the gravy becomes thick on low heat.
Garnish with coriander leaves and serve with Indian flat bread/ bread.
