Eggs have lot of nutritional benefits and are super health foods. They are consumed all over the world and is a rich source of protein. Hard boiled eggs are good for bones and eyes. Eggs can be prepared in many ways.
My son loves eating egg puff, so tried at home for the first time and it came well. Egg puff is a popular snack with a crispy outer covering. Main ingredients are eggs and Maida/refined flour. Egg Masala is used as a stuffing and kept inside pastry sheet and baked in oven.
INGREDIENTS
FOR THE DOUGH
Maida/Refined flour 2 tea cups
Butter 40 gms
Water
Salt to taste
Olive Oil / butter / refined oil 1 tbsp
FOR THE STUFFING
Eggs cut in halves 2 no
Onion finely diced 2
Ginger garlic paste 1 tbsp
Green chillies finely cut 2
Turmeric powder 1/2 tsp
Coriander powder 2 tsp
Garam masala powder 1 tsp
Coriander leaves and celery 1 tbsp finely diced
Salt to taste
Olive oil/ refined oil 2 tsp
METHOD
Add refined flour, salt , butter and and enough water to make a dough. Knead till it becomes smooth , it should be little sticky consistency. Keep it aside or in the fridge for half an hour.
In a frying pan heat oil add onions, green chillies and saute till onion changes colour. Add garlic and ginger paste and saute till the raw smell of garlic disappears.
Add turmeric, coriander powder, garam masala, salt and saute for 2-3 minute on low flame. Turn off the heat. Add coriander leaves and celery. Keep it aside.
Take the dough out knead it well. Flatten the dough with a rolling pin brush olive oil and fold it. Again flatten it and repeat the process 4-5 times.
Divide the dough in four balls.
With a rolling pin stretch as far as possible in rectangular shape.
Brush olive oil and fold this into 4 times.
At the centre place 2 tsp of onion mixture and half piece of hard boiled egg upside down.
Seal all the four sides in the center.
Grease a baking tray or keep a parchment paper and arrange the egg puffs.
Brush upper side of the puff with egg.
Preheat the oven for 10 minutes. Bake at 170 deg C for 30 – 35 minutes or till it turns golden brown. Keep in the middle rack on toast option.
Serve hot with tomato or tamarind sauce.
