Vegetable pulao is a very simple dish and easy to prepare. This makes a great lunch box recipe too. Onion, tomato raita goes well with this dish. It is loaded with vegetables and kids love to eat.
INGREDIENTS
VEGETABLES FOR PULAO
CARROT cut in cubes 1/4 cup
CAULIFLOWER florets 1/4 cup
PEAS 1/4 cup
BEANS 1/4 cup finely cut
POTATO 1/4 cup cut in cubes
GREEN CHILI 2 slit
GARLIC 8 cloves
GINGER 1′ piece
ONION 1 medium finely chopped
TOMATO 1 medium finely chopped
FOR DRY GRIND
CLOVES 3
CARDAMOM 3
CINNAMON 2′
JEERA 1 tsp
CORIANDER seeds 1 tsp
KHUS KHUS 1 tsp
FENNEL SEEDS 1 tsp
OR GARAM MASALA 2tsp
OTHER INGREDIENTS
RICE 1 AND 1/2 CUP
BAY LEAF 2
GHEE / OIL 1 TBSP/OIL
SALT to taste
METHOD
Take a pan on medium heat first put the coriander seeds and dry roast for 1 minute , then add all the other spices and roast for a minute. switch off the gas and cool it.Then dry grind it.
Take a deep pan heat the ghee on medium fire . Add all the vegetables and saute it for 2 minutes , add the garlic and ginger(make a paste) and saute till the raw smell disappears.
Wash the basmati rice twice , drain off all the water and add to the vegetables and saute them for 2 to 3 minutes , add the dry ground masala and saute for a minute and switch off the gas. Add salt according to taste. keep aside and let it cool.
After it cools down transfer to a vessel and add 2 and 1/2 cup of water.
Take a pressure cooker add water to the bottom of the cooker and put the vessel inside the cooker. Cook till 4 whistles come and switch off the gas.After the pressure in the cooker slowly reduces and is fully gone open the lid and garnish with coriander leaves.
Serve hot with onion raita , pickles and papads.
