Sabudana or sago is also known as tapioca pearls. It is extracted from tapioca root, shaped in lump form roasted and dried. It keeps blood pressure under control, helps muscle growth, boosts energy levels and improves digestion. It contains carbohydrates and appreciable amount of vitamin c and calcium. Some popular dishes made from sabudana are bonda, khichdi, kheer, vada, upma and halwa.
This recipe is very yummy and easy to make. Very less ingredients are needed for this recipe. Ingredients used are milk, sabudana, mango and sugar. I have used banganapalli mangoes. They are known as king of mangoes. The pulp is firm, yellow and are very sweet.
INGREDIENTS
- Mango 1
- Tapioca pearls 1/4 teacup
- Sugar 1 tbsp
- Milk. 1 and 1/2 teacup
- Water 1 tea cup
METHOD
Rinse once the tapioca pearls and soak in water for half an hour. After half an hour rinse again and drain the water.
In a deep pan boil 1 teacup water, 1 and 1/2 teacup milk, sugar and tapioca pearls on low heat for half an hour stirring in between or it will stick to the bottom. Once it becomes thick and the tapioca pearls are cooked turn off the heat. Allow it to cool.
Remove the skin of the mango and chop in small pieces. Blend 2/3 mango in a blender into a nice puree.
The other 1/3 mango pieces, keep it aside.
Once the milk cools down , add the mango puree and chopped mangoes and mix well.
Keep in the refrigerator to cool. Serve chilled.
