Brioche is a rich bread which means protein and fats are high, it’s not like any normal bread which contains yeast, flour, water , salt but this bread contains more eggs and butter.

This bread originated in France and due to more butter and eggs the crumb is tender,and moist. Its slightly yellow in colour because of the eggs and butter. It is served warm.

SERVES: 2 -3 PEOPLE

INGREDIENTS

FOR THE DOUGH

  • Maida 1/2 cup
  • Wheat flour 1/2 cup
  • Butter 1 tbsp
  • Egg 1
  • Salt 1 tbsp
  • Sugar 1 tbsp
  • Yeast 1 tbsp
  • Warm water 3 tbsp
  • Milk 1 /4 cup or as required

FOR The FILLING

  • Mushroom finely chopped 200 gm
  • Coriander powder 1 tsp
  • Capsicum small chopped
  • Cinnamon powder 1 /2 tsp
  • Oregano seasoning 1 tsp
  • Pepper powder 1 tbsp or to taste
  • Onion finely chopped 1
  • Garlic finely chopped 1 tbsp
  • Mint leaves handful
  • Butter 1 tbsp
  • Salt to taste

OTHER INGREDIENTS

  • Sesame seeds 1 tsp
  • Oregano seasoning 1 tsp
  • Milk 2 tbsp

METHOD

In a small bowl add yeast, sugar, warm water. Cover and leave for half an hour. The yeast will nicely froth up.

Take a large bowl add maida, wheat flour, egg, salt, butter and mix nicely. Add the yeast and again mix nicely. Add little by little warm milk and gather to a sticky dough.

Knead for ten minutes nicely. Cover and keep for 2 hours for proofing. Brush some milk on top.

In a frying pan add butter, onion , capsicum and garlic. Saute nicely ,when onion changes colour add coriander powder and saute for a minute on low heat. Add the mushrooms and cook till all the liquid is absorbed. Add pepper powder, oregano seasoning , cinnamon powder and salt. Incorporate everything nicely on low heat. Turn off heat and add the mint leaves and mix well.

After 2 hours the dough will double in size. Take it out and knead again for 3 minutes.

Dust some flour on working board and roll out the dough. Cut discs of 3 inches each.

Add a tbsp of mushroom and a tsp of mozzarella cheese on top of each disc.

Line a baking tray with parchment paper or grease with butter.

Fold in semi circle and keep each one next to another inside baking tray. The open part of the semi circle should be on top.

Keep for proofing for 1 hour, the dough will double in size. Brush with milk , add sesame seeds and oregano seasoning.

Preheat oven for ten minutes.

Brush some milk on top and Bake for 18 to 20 minutes at convection mode in lower rack at 180° C.

After baking take it out, cover with a muslin cloth and let it cool down.

Enjoy the brioche with some mayonnaise of your choice for breakfast or dinner.
