Muffins are quick and very easy to make. They are baked in small portions and kids love to eat. They are small semi sweet cake and are often eaten for breakfast or served for tea . In this recipe the zest and juice of orange brings out a good flavour and taste of orange.

INGREDIENTS

  1. Maida/refined flour  2 teacup
  2. Baking powder 1 tsp
  3. Baking soda 1/4 tsp
  4. Butter         50gm
  5. Eggs             2
  6. Orange zest 1 tbsp
  7. Orange juice 1/4 tea cup
  8. Milk.  1/4 tea cup
  9. Orange essence 1/2 tsp
  10. Sugar 3/4 teacup

Note: 8-10 muffins

METHOD

Preheat the oven at 180° c

Beat the eggs in a bowl. Keep it aside.

Take an orange, grate the outer coloured part of the orange and keep the zest aside. Cut the orange and squeeze and keep the juice aside.

In a blender powder the sugar into fine powder. If you are using powdered sugar no need to do this step.

Sieve maida, baking powder and baking soda three times. Keep it aside. If  you are using a self raising flour no need to use baking soda and baking powder. In a self raising flour already baking powder has been added, so you can skip this step.

In a bowl add eggs, powdered sugar, orange zest and orange juice, milk and butter, mix all the ingredients well to a smooth batter. Add the maida, orange essence and mix until smooth. Be careful not to over mix the batter as this will make the muffins tough.

Fill the muffin cases two thirds full and bake for 20-25 minutes,until firm to touch and check by inserting a toothpick in the middle into a muffin. If it comes out clean muffins are cooked. Leave the muffins to cool for 10 minutes and transfer to a wire wrack to cool completely.
