Pav bread is a spongy, soft, fluffy indian bread prepared with refined flour and yeast. This can be served wih pav bhaji misal pav , vada pav or with any other indian curry.
This recipe is an eggless one, in this refined flour and yeast are nicely kneaded. It is rested for more than an hour or till it doubles in size. Then again it is beaten and kneaded divided in equal size balls. Again rested for half an hour and baked in oven.
INGREDIENTS
- Maida 2 tea cups
- Sugar 1 tsp
- Yeast 1 tsp
- Milk 1 tea cup +2 tbsp
- Salt 1/2 tsp
- Olive oil 1 tbsp + 1 tsp
- Butter 1 tbsp
METHOD
Add yeast and sugar to 3/4 tea cup warm milk in a large vessel. Mix it and cover it for 5 minutes. After five minutes the milk will froth up.
Add 2 tea cups maida, butter and salt. Knead it, add the remaining milk at a time. The dough will be little sticky but should be able to knead. If it becomes too sticky add little flour.

Knead nicely for ten minutes till it becomes very soft. Add 1 tbsp olive oil and knead again for two minutes. Cover and rest for an hour.

The dough will become double the size. Knead it again, if it is sticky add little flour and knead.
Divide it in six equal portions. Knead the divided portion till smooth.
Grease a baking tray with olive oil or place parchment paper. Place the balls on the tray. Brush some milk on top. Cover it and rest for half an hour.
Preheat the oven for ten minutes. Bake it at 180°C for twenty minutes on convection mode.

Take it out and rest it. Take a knife and run through the edges.

Brush it with butter and serve it with hot bhaji.
