Papaya has variety of health benefits and one should include this ‘fruits of angel’ in ones diet. They are sweet and vibrant in colour. It helps in lowering cholesterol, boosts immunity, reduces risk of heart disease, cancer, aids in digestion, lowers blood pressure and improves blood glucose control in diabetics.
I had this over riped papaya so instead of throwing it away, i peeled the skin, removed the seeds and mashed it. Cooked in thick milk, added sugar and ghee(clarified butter), garnished with raisins and cardamom powder and made a very tasty halwa. Its very easy to prepare and tastes delicious.
INGREDIENTS
- Papaya small 1 cup
- Sugar/honey 1 tbsp
- Ghee 2 tsp
- Milk 1 cup
- Raisins 1 tbsp
- Cardamom powdered 1 tsp
- sesame seeds 1 tsp
METHOD
Wash and peel the papaya. Remove the seeds and grate it or mash it if is too ripe.
In a wok or kadai add sesame seeds and dry roast till you hear the spluttering. Take it out and keep in a plate. In the same kadai heat 1/2 tsp ghee and fry the raisins till it puffs up, remove from heat and keep it separately in another plate.
Use the same Kadai to heat milk and reduce to almost 1/3 consistency on low to medium heat. Add the grated/mashed papaya and sugar.
On medium heat keep on stirring the papaya till all the milk is absorbed, lower the heat and add ghee and stir for a minute or two.
Add the sesame seeds, raisins and cardamom powder and stir well into the halwa.
Tasty papaya halwa is ready, serve it hot.
