
White or red which one do you like ?? For me though I like both but little more preference for the white if its prepared properly. Pasta is from @WeikfieldIndia, a very trusted brand, tried out their pasta and it turned out to be delicious with broccoli, baby spinach, mushrooms, seasoning and two types of cheese.
Pasta provides one with energy and essential nutrients in the form of fiber, vitamins and minerals. White and whole wheat pastas serve as excellent sources of selenium, a mineral that activates antioxidant enzymes.
For making pasta it involves four stages, first one is how to boil and cook pasta, second is how to cook the vegetables, third is how to make the sauce and fourth to mix all the ingredients in the sauce.
I love making pastas, its very simple and tastes delicious. My family likes to eat pastas with cheese bread and soups.
INGREDIENTS
FOR PREPARING PASTA
- Pasta 2 cups
- Water 8 cups
- Salt 1/2 tsp
- Oil 1 + 1 tsp
INGREDIENTS FOR STIR FRYING
- Celery finely chopped 1 tbsp
- Capsicum chopped a handful
- Mushroom chopped a handful
- Brocolli florets a handful
- Onion finely chopped 1
- Garlic finely chopped 1 tbsp
- Baby spinach 15 leaves
- Olive oil 1 tbsp
- Salt to taste
FOR THE WHITE SAUCE
- Milk 1 and 1/2 cup
- Maida 2 tbsp
- ButterĀ 2 tbsp
- Pasta stock 1 cup or required accordingly
- Pepper powder 1 tbsp
- Oregano seasoning
- Olive oil 1 tbsp
- Mozarella cheese 3 tbsp
- Parmesan cheese 3tbsp
FOR GARNISHING
- Parmesan cheese 1 tbsp
- Scallions chopped 2 tbsp
METHOD
Chop all vegetables.
Heat 8 cups water in a heavy bottomed vessel and bring it a boil. Add 1 tsp olive oil and salt 1/2 tsp. Add the pasta once the water starts boiling. Cook till its aldente.
Take out and strain , add oil and spread on a plate. Keep it aside. Dont throw away the stock ,keep it aside.
In a wok / kadai heat a tbsp olive oil ,add finely chopped garlic and onion saute till onion turns colour. Add the capsicum, celery, mushrooms, broccoli and saute till they are all cooked and crunchy on medium heat. The vegetables should not be overcooked or soggy. Season with salt. Add the baby spinach, stir and turn off heat. Keep it aside.
Heat a pan add butter once it melts add the maida, mix well on low heat for a minute.
In low flame melt butter in a pan add butter. Add the flour and keep stirring till the floury smell disappears, do not brown it . Add the milk slowly stirring the flour continuously, no lumps should be made. You will get a smooth thick consistency sauce, add both cheese and stir till it comes to a thick consistency and turn off the heat( if it is too thick add little more milk or reserved stock to it on low heat). Add oregano, salt and pepper. Add the reserved stock according to your desired consistency.
Add the pasta and coat nicely with the sauce.
Add the vegetables and give a mix.

Taste and see whether you need more salt, pepper powder, oregano seasoning. If consistency is thick can add more stock. Adjust according to your taste and desired consistency.
While serving add scallions and grate parmesan cheese on top.
