Pav or bread was introduced by Portuguese and bhaji means vegetable dish in traditional India. Pav bhaji is Maharashtrian fast food. This dish is a spicy preparation with mixture of mashed vegetables, garnished with coriander leaves and onion with a dash of lemon and consumed with warm bread gently or crispy fried in butter.
INGREDIENTS
Pavs 6
Amul butter 25 – 50 gms
Potato boiled medium 2
Onion large finely chopped 1
Tomato large 3 no.
Baby corn finely chopped 1 no.
Coriander leaves finely chopped 2 tbsp
Ginger garlic paste fresh 2 tsp
Lemon juice 1 tbsp
Green chilli finely chopped 1-2 no.
Red chilli powder (optional) 1 tsp
Garam masala powder 1 tsp
Amchur / dry mango powder 1 tsp
Salt to taste
METHOD
Mash the potatoes and keep aside.
In a pan add 25 grams butter, when the butter melts add onions, ginger-garlic paste and green chillies. Saute till onion becomes transparent and the raw smell of the garlic disappears.
Blend the tomatoes in a blender and add to the onions. Cook on low to medium heat for 5 minutes. Add the mashed potatoes and mix well. Add the finely cut baby corn.
Add the garam masala powder, amchur/dry mango powder and salt. Add some water and on low heat keep on stirring and simmer and cook for 5 more minutes.
Turn off the heat. Add lemon juice and mix well. Garnish with coriander leaves.
TO MAKE PAVS
Slice the pavs into halves. Heat a tawa /flat pan and butter the pavs both sides and keep it on the tawa at medium heat for a minute or two. For crispy pavs leave it on tawa for some more time.
Serve the hot pavs with the bhaji,
Note:
- I have added only 25 gms of amul butter. Oil can be used instead of butter.
- I have not used pav bhaji masala instead of that used home made garam masala powder and amchur powder. You can use pav bhaji masala.
- Garam masala, amchur, butter and chillies can be adjusted according to your taste.
