Water amarnath or ponnanganni keerai is very popular in South India. It originated in America and was later introduced to Asia. Its leaves are used in curries and soups and it comes in many variety- red, green and bicolour. It has lot of health benefits like improves kidney function, bone growth, protects from osteoporosis.
In this recipe ponnanganni keerai is stir fried with onions and garlic. When it is half cooked egg is added to it. This recipe is very simple to make. I am using homemade greens.
INGREDIENTS
Water Amarnath / ponnanganni keerai a bunch
Garlic 15 cloves cut in length wise
Green chillies 2-3 no.
Egg 2 no.sp
Turmeric powder 1/4 tsp
Oil 2 tsp
Salt to taste
METHOD
Wash the greens and chop it. Take a deep frying pan heat oil and add the onions and garlic. Saute till onions becomes transparent. Add turmeric powder and saute for few seconds.
Add the greens and saute till it is half cooked .
Beat and add eggs and stir continuously. Add salt.
When the eggs are done turn off the heat.
Serve with rice /flat bread.
