Bell peppers are available in yellow, orange, red, purple, green. They are bell shaped , plump and are also known as capsicum, basically less pungent and sweet than other peppers. For their attractiveness and colour these vegetables are used all over the world.

They are rich in antioxidants and have anti-inflammatory properties. Green pepper is good for healthy hair and nails, it is low in fat and calories.

In this recipe potato is cooked with fresh masala and crushed peanuts, then stuffed in capsicum and cooked in a pan. Capsicum was crispy and the flavour of capsicum was not lost as I didn’t fully cook it. Inside the peanuts in the potato was crunchy and outside capsicum was crispy and delicious.

INGREDIENTS

  • Capsicum medium 2
  • Olive oil 1 tbsp

FOR STUFFING

  • Saunf 1/2 tsp
  • Jeera/cumin seeds 1/2 tsp
  • Carom seeds/ ajwain 1/2 tsp
  • Garam masala powder 1/4 tsp
  • Boiled potatoes 2 medium
  • Peanuts crushed 3 tbsp
  • Salt to taste
  • Olive oil 1tsp
  • Coriander leaves chopped 2 tbsp
  • Green chillies/chilli powder
  • Garlic 3 cloves
  • Ginger 1″
  • Onion chopped finely 1
  • Turmericpowder 1/4 tsp

METHOD

Wash the capsicum and pat dry. Cut the top part carefully and remove the seeds. Rub olive oil on the outside part and inside part, keep it aside.

In a mortar and pestle or blender coarsely blend green chillies, saunf, jeera, Garlic, ginger and carom seeds.

Take a frying pan heat olive oil and add the onions, saute till they turn transparent. Add turmeric powder and coarsely pounded/ blended masala, suate for a minute or till the raw smell of garlic disappears. Add the boiled and mashed potato, salt and mix it well. Turn off the heat. Add the coriander leaves and crushed peanuts.

Divide the filling in two parts and stuff the capsicum till the top. Cut the capsicum into half from top.

Heat a nonstick flat bottom pan. Add little oil and place the capsicums, cover and cook for eight to ten minutes, then turn it and cook for five to eight minutes. If you want your capsicum to be fully cooked keep for some more time.

Serve hot.

Note: after filling the capsicum cut it into half.

Cook the capsicum according to your requirement.
