Rasmalai is believed to be originated in Bengal. Ras means juice and malai means creamBy adding rose powder rose ras malai can be prepared. I love the flavor and taste of rose so tried experimenting with rose powder.

Ras means juice and malai means cream. There are three steps ,first have to prepare chenna or paneer then make the ras malai balls and then the rabri in which the ras malai balls will be dunked.

INGREDIENTS

FOR THE CHENNA

  • Milk 500 ml full fat pasturised
  • Lemon or vinegar 1 tbsp
  • Rose powder 1/2 tsp
  • Sugar 1/3 cup
  • Cardamom 2

FOR THE RABRI

  • Milk 500 full fat pasturised
  • Sugar 1/3 cup
  • Water 2 cups
  • Rose powder 1 tsp
  • Cardamom powder 1 tsp
  • Pistachios crushed 2 tbsp
  • Rose petals a handful
  • Saffron 6 strands

METHOD

HOW TO PREPARE CHENNA

Boil 500 ml homogenised pasteurized milk. Once it comes to boil, add 1/2 tsp rose powder and mix it .

Add lemon or vinegar. Milk will curdle. Immediately Take out the chenna in a muslin cloth. Wrap it in the cloth and put under running water.  Hang it for an hour in the muslin cloth.

Once the whey stops dripping chenna is ready.  To check take little chenna and smear on a board, chenna should be not sticky and grainy. Too much moisture will make it sticky hang again for a longer time. Too grainy or crumbly means its over drained  so knead with moist hands.

Nicely knead the chenna or paneer till it becomes soft for atleast ten minutes.

Dont over knead it, fat should not come out. Knead on your palm.


Divide into 10 equal parts. Make  balls.

Gently flatten it. If it breaks on edges smoothen it. Cover it and keep aside.

In a pan heat 2 cups of water, add 1/3 cup sugar and two cardamom. Once it comes to a boil add the chenna.  Cover and cook for ten minutes on moderately high flame.

The chenna will double in size. Turn off heat and let it rest for 20 minutes. If your chenna breaks while boiling  it means too much whey was there.

HOW TO PREPARE RABRI

Boil 500 ml milk, add saffron  simmer and reduce to half. Add 2 -3 tbsp sugar and 1 tsp rose powder. Turn off heat. Add a tsp cardamom powder.

Gently take out the chenna one by one squeeze the syrup and add to  the warm rabri. Add chopped pistachios ,cashews, rose petals and serve chilled.
