Eggs have lot of nutritional benefits and are super health foods. They are consumed all over the world and is a rich source of protein. Eggs can be prepared in many ways, they are poached, fried, scrambled or boiledThe whites are rich sources of selenium, Vitamin D, B6, B 12 , B2 and minerals such as zinc, iron and copper.

This recipe given below is very simple and can be taken with hot steamed rice or Indian bread.

INGREDIENTS

  • Hard boiled eggs   2
  • Tomato                   2
  • Onion                      1
  • Garlic pods            4-5
  • Ginger                     1″
  • Coriander powder  1 tsp
  • Jeera powder       1/4 tsp
  • Turmeric powder  1/4 tsp
  • Chilli/pepper powder    1 tsp
  • Garam masala powder 1/2  tsp
  • Oil                               1 tbsp
  • Salt to taste

METHOD

Chop onions, garlic, ginger and tomatoes very fine length wise.

Heat oil in a deep frying pan/kadai, add onions, garlic and ginger. Saute till onion changes golden in colour. Lower the flame add coriander powder, turmeric powder, chilli/pepper powder and saute for half a minute.

Add tomatoes, garam masala powder, jeera powder, 1/2 teacup water, salt and cook till tomatoes become soft. Add the hard boiled eggs and cover and cook for two minutes. Turn off the flame. Consistency of the gravy depends up to you so add water accordingly.

Serve hot with rice or Indian bread.
