Cutlet refers to cooked meat in Indian cuisine. Here we are using soya chunks instead of meat.

Soya chunks are highly nutritional and full of rich proteins, calcium and iron. They are odorless and tasteless. For vegans it is a meat substitute. Soya chunks ae made from soy beans. They are used in soups, strew, masala dishes, salads etc. They come in the form of regular chunks, mini chunks and granules.

INGREDIENTS

  • Sweet potato medium 1
  • Soya chunks.    1 cup
  • Onion finely chopped 1
  • Green chillies finely chopped 1-2
  • Coriander leaves chopped 1/2 cup
  • Garlic pods 5-6
  • Carom seeds 1″
  • Fennel seeds 1/2 tsp
  • Coriander powder 1 tsp
  • Cloves 2
  • Turmeric powder 1/4 tsp
  • Bread crumbs 1cup
  • Corn flour 1 tbsp
  • Maida 1 tbsp
  • Salt to taste
  • Refined oil 3-4 tbsp

METHOD

Finely chop onions, coriander leaves and chillies.

In a pestle and mortar make a paste of garlic, cloves, cinamom, fennel seeds, coriander powder, carom seeds.

Boil sweet potato and soya chunks separately. Peel and mash sweet potato after it cools down. Squeeze the water out of soya chunks nicely and blend in a blender coarsely. Mix both in a bowl.

Heat 2tsp oil in  a kadai, add finely chopped onions and sauté for two minutes on medium heat add the ground paste and low flame sauté for two minutes.

Add green chillies and turmeric powder and sauté for two two seconds.

Add the potato and soya chunks mixture in the kadai, add salt, coriander leaves and mix well. Turn off the heat and let it cool.

In a bowl add corn flour , maida and enough water to make into a paste.

Make it into lemon size balls.  Dip it in corn flour – maida mixture then roll in bread crumbs and flatten it.

Heat 1 tbsp oil in an iron tawa/skillet , add the cutlets and flip them and cook both sides to a golden brown.

Serve hot with tomato sauce in the evening with tea😍😍
