Drumstick leaves are the most nutritious part of the plant. It is rich in Vitamin A, Vitamin B, Vitamin C, Vitamin k, manganese, phosphorus, calcium and other essential nutrients. Drumstick builds immunity against joint pain, mouth ulcer, fever and eye diseases. It has the power of reducing sugar level in blood.
In this recipe drumstick leaves are stir fried with onions and garlic and at the end crushed peanut is added to it. This gives a crunchy taste to the dish.
INGREDIENTS
Drumstick leaves                  2  tea cups
Peanuts                                     1/2 cup  tea crushed
Garlic cloves(indian)           10 – 15
Onion medium finely cut   1 no.
Dry red chillies                       2-3 no.
Lemon juice                             1 tbsp
Olive oil/ refined oil            2 tsp
Salt to taste
METHOD
Take out the leaves carefully from the stalk , wash in a colander and keep it aside
Heat oil in a frying pan add broken red dry chillies, onions and garlic saute till onions becomes transparent.
Add the drumstick leaves and mix it well with the onions and garlic. Cover and cook at low heat stirring occasionally till the leaves are done. Add salt.
Turn off the heat. Add the crushed peanuts and  Lemon juice. Mix it well.
Serve hot with steamed rice.
Note: If you wants to cook uncovered add some water and cook.
