Due to corona not able to visit my parents house, so I was super happy when they courierd mangoes and it reached in good condition. Decided to try out as many mango dishes as I can and this is among the recipe, a very easy one where no cooking is required.
Mangoes are native to India and south east Asia. They are called the king of fruits and is a seasonal fruit, they have a unique flavour, colour and taste. During hot summer this delicious seasonal fruit gives relief from sweltering heat and has lot of health benefits too.
Mangoes are a low calorie fruit that is very high in fiber. It is a great source of Vitamins A and C. It also contains folate, iron, little calcium, vitamin E and B6. It improves eye sight, digestive health, immunity and lowers risk of certain cancers.
Serves -2-3 person
INGREDIENTS
- Mango 1
- Strawberry 6
- Hung curd 1 cup
- Sugar 2 tbsp
- Cardamom powder 1/2 tsp
- Salt a pinch
FOR GARNISHING
- Mint leaves a few
- Crushed nuts a tbsp
METHOD
Wash the mango and strawberries, wipe it with a kitchen towel.
Remove the skin and seed of the mango. Blend the mango flesh, 1/2 of hung curd, a pinch of salt and a tbsp sugar in a blender to smooth paste. Keep it aside.( if mangoes are sweet no need to add sugar)
Add the other half portion of hung curd to strawberry. Add a tbsp sugar or according to your taste , cardamom powder and a pinch of salt. pulse it in the blender to a smooth puree.
In glasses( it’s your choice what type of glasses you prefer) add a layer of mango then strawberry then mango then a layer of strawberry. You can Arrange the layers in glasses according to your choice.
Garnish wih crushed pistachios almonds and mint leaves. Keep it in refrigerator and serve it cold.
