Bell peppers are available in yellow, orange, red, purple, green. They are bell shaped , plump and are also known as capsicum, basically less pungent and sweet than other peppers. For their attractiveness and colour these vegetables are used all over the world.

They are rich in antioxidants and have anti-inflammatory properties. Green pepper is good for healthy hair and nails, it is low in fat and calories.

One of my cousin showed how to prepare this at our home and it became an instant hit. After that my mom used to prepare once in a while with boiled potatoes as stuffing. She used to stir the stuffed capsicum in a frying pan in little oil. But here I am baking the stuffed capsicum and it is quite easy.

INGREDIENTS

Capsicum medium 2 no.
Olive oil 1tsp

FOR STUFFING

Walnuts 1 tbsp chopped roughly
Raisins 2 tsp
Garam masala powder 1/4 tsp
Boiled potatoes 2 medium
Salt to taste
Olive oil 1tsp
Coriander leaves finely chopped
Garlic ginger finely choppped
Onion small 1 chopped finely
Turmeric powder 1/4 tsp

METHOD

Wash the capsicum and pat dry. Cut the top part carefully and remove the seeds. Rub olive oil on the outside part and keep it aside.

Take a frying pan heat olive oil and add the onions, garlic and ginger till they turn golden brown . Add turmeric,garam masala powder and saute for a second. Add the boiled and mashed tomato . Add salt and mix it well. Turn off the heat. Add the coriander leaves, walnuts and raisins.

Divide the filling in two parts and stuff the capsicum till the top

Preheat the oven and bake at 225 deg c for 10 minutes in the rack.

Serve hot.
