Modern pizza was invented in Italy and has become famous all over the world. Pizza is a flat bread topped with tomato sauce, cheese and toppings. It is baked in oven.Base for pizza can be made at home or it is available in stores. Good yeast is required to make the pizza dough at home. Usually mozzarella cheese is used, but here I have used 3 variety of cheese.
This pizza recipe has three types of cheese – mozzarella cheese, cheddar cheese and Parmesan cheese. All these cheese have different taste, mozzarella is the less processed one and the most used cheese in pizza. Parmesan is the hardest and used on top of the pizza it does not melt. Cheddar has a tang from the bacteria it produces it and is used with mozzarella to preserve chewiness.
INGREDIENTS
FOR THE DOUGH/BASE OF PIZZA
Maida 1 and 1/2 tea cup
Yeast 2 tsp
sugar 2 tsp
warm water 1/4 tea cup
Olive oil 1 tbsp
Salt to taste
FOR THE TOPPINGS
Red capsicum medium 1/2
Green capsicum 1/2
Yellow Capsicum 1/2
Onion cut in squares 1/2
Olives 1 tbsp
Sweet corn kernels 1 tbsp
Oregano 1 tbsp
Mushrooms 2-3
Garlic 3-4
Fresh Pepper powdered 2 tsp
Tomato sauce 4 tbsp
Worcestershire sauce 1-2 tbsp
Cheddar and mozzarella cheese 100 gm
Parmesan cheese 2 tsp
Kasuri methi 1-2 tsp
Olive oil 2-3 tbsp
METHOD
Cut all the capsicum, onion in small square shapes and cut finely mushroom. Crush and cut the garlic.
Add 2 tsp yeast in 1/4 cup of warm water with sugar, cover and wait for 5 minutes. Add it in 1and 1/2 tea cup maida/all purpose flour and knead it. Add salt , olive oil and enough water to make a dough. Cover with a wet cloth and keep it aside in a warm place .It will rise in 3-4 hours.
Heat 2 tsp olive oil in a pan add garlic and saute for 2 seconds then add red, green, yellow capsicum, onions, sweet corn on medium heat saute for 2-3 minutes. Add 1 tbsp tomato sauce and 2 tbsp worcestershire sauce. Stir till the sauce reduces for 2-3 minutes. Turn off the heat. Add pepper powder and oregano powder. Keep the toppings aside.
Take the dough and grease the tray in which you are going to bake with olive oil. Spread the dough with your hands and make a round disk ( 7 inches) like a roti( or you can use a rolling pin). The base can be prepared thin or thick as desired. Put this in a greased tray and preheat oven for 10 minutes and bake the base for 4-5 minutes.
Take it out of the oven and flip it. Prick some holes with a fork.
Spread 3 tbsp tomato sauce over the base and add 1 tbsp olive oil on top of the sauce.
Add half of the grated Cheddar and mozzarella cheese on top of the tomato sauce.
Add the toppings and on top add rest of the Cheddar mozzarella cheese, Parmesan cheese, oregano and ground pepper. Crush kasuri methi on top of the cheese.
Bake in a preheated oven for 15 minutes at 180 deg C or till the cheese melts.
Note: I have baked the pizza on the lowest shelf for 8 minutes and 2 minutes on upper shelf of the OTG on toast mode.
