Green gram or moong dal as it is called in India has lot of health benefits. Sprouts are very healthy and promotes good health. It is the best vegetarian super food. Moong bean sprouts are low in calories, high source of nutrients including manganese, potassium, magnesium, copper and zinc, boosts Vitamins B, C and K. . It is a good source of protein and folic acid, has dietary fiber,good for skin and hair.

This is very easy sprout curry few ingredients are needed and preparation time is very less. Onion, coriander powder and pepper masala is prepared and cooked with sprouts. It’s easy, tasty and healthy, goes well with Indian bread/ idlis/ dosas.

SERVES: 2 PEOPLE

INGREDIENTS

  • Sprouts 1 cup
  • Tomato big 1
  • Turmeric powder 1/4 tsp
  • Oil 3 tsp
  • Shallots 3-4
  • Salt to taste

FOR WET GRIND

  • Onion big chopped 1
  • Coriander powder 1 tbsp
  • Pepper corns  1-2 tsp

METHOD

In a frying pan heat two tsp oil. Add roughly chopped onion and saute till it turns golden in colour. Add coriander powder and sauté on medium heat for a minute. Add pepper corns and turn off the heat. Let it cool down. Add some water and grind to a fine paste. Keep the masala aside.

Heat oil in same frying pan add finely chopped shallots, let it turn golden in colour. Add turmeric powder and tomatoes. Sauté till tomatoes becomes soft and mushy.

Add the ground masala and mix well for 2-3 minutes. Add a cup of water and let the gravy come to a boil. Season it with salt. Add the sprouts and cook for a two three minutes so that the masala mixes well with the sprouts. Turn off the heat.

Serve hot with Indian bread/ idli/ dosa.
