Raw bananas are widely cultivated in southern india and are used in Indian cuisines. They are rich in fiber and vitamins. Sugar content is low, so good for diabetic people. Helps in lowering blood pressure, prevents stomach and heart problems.
This simple recipe I learnt from a dear friend of mine a long time back. The raw bananas are first boiled in hot water, cooled. Then peeled and grated. Seasoned with mustard, red chilies, cumin, dal and curry leaves. Garnished wih lemon juice and freshly grated coconut. It’s an accompaniment with rice.
INGREDIENTS
- Raw plaintain 2
- Cumin seeds 1 tsp
- Mustard seeds 1/2 tsp
- Red dry chilies 2-3
- Curry leaves 2 sprig
- Coconut 3 tbsp
- Shallots 7-8
- lemon juice 1 tbsp
- Salt to taste
- Oil 1 tbsp
METHOD
Heat enough water in a vessel and add the whole plaintains. Boil it on medium heat for ten minutes. Turn off the heat. Once it cools down, remove the skin. Discard the skin and grate the inner white part. Keep it aside.
Heat oil in a kadai , add mustard seeds and cumin seeds , let it splutter. Add chopped shallots , red dry chilies and curry leaves. Saute till the shallots turn colour. Add the grated raw banana. Season with salt and incorporate everything nicely.
Add lemon juice and grated fresh coconut, incorporate well.
Serve hot with rice as an accompaniment.
